#Thai Noodle Salad with Peanut Sauce


A simple delicious recipe for Thai Noodle Salad with Peanut Sauce, loaded up with healthy veggies. Vegan and Gluten free, this make-ahead salad is perfect for midweek lunches or large gatherings. Add Sesame Ginger Tofu for added protein!

Ingredients

  • 1/2 bunch Cilantro
  • 1 fat clove Garlic
  • 4 cups Mix of cabbage
  • 1/4 cup Peanuts, roasted
  • 1 Red bell pepper
  • 3 Scallions
Condiments
  • 3 tbsp Honey or agave
  • 3 tbsp Lime juice, fresh
  • 1/4 cup Peanut butter
Pasta & Grains
  • 6 oz Noodles, dry
Baking & Spices
  • 1/2 tsp Cayenne pepper
  • 1/2 tsp Salt
Oils & Vinegars
  • 3 tbsp Sesame oil, toasted
Drinks
  • 1 4 cup fresh orange juice ( roughly 1/2, fresh
Other
  • 1 tablespoon (or less, or more) jalapeño, finely chopped
  • 2 tablespoons soy sauce or GF Braggs Liquid Amino Acids (Note: Tamari will turn this unpleasantly dark)
