#Chopped Thai Noodle Salad with Peanut Dressing


Thai Noodle Salad with Peanut Lime Dressing - veggies, chicken, brown rice noodles, and an easy homemade dressing. My favorite salad ever!
Ingredients
Gluten free
∙ Serves 6
Meat
  • 1 lb Chicken breasts, boneless skinless
Produce
  • 5 cups Baby kale or spinach
  • 3 Bell peppers
  • 3 Carrots, large
  • 1/2 cup Cashews or peanuts
  • 1 cup Cilantro, packed leaves
  • 2 large cloves Garlic
  • 4 Green onions
Condiments
  • 2 tbsp Honey
  • 1 tbsp Lemongrass or ginger paste
  • 2 BIG squeezes Lime juice
  • 1/4 cup Peanut butter
  • 1/3 cup Soy sauce, low sodium
Pasta & Grains
  • 4 oz Brown rice noodles
Oils & Vinegars
  • 1/2 cup Canola oil
  • 1/4 cup Distilled vinegar, white
  • 2 tbsp Sesame oil
Liquids
  • 2 tbsp Water
