Ingredients

- 11 cups Clam, juice
- 1 lb Fish bones, fresh
- 1 Fish stock
- 18 Littleneck clams
- 18 Mussels, black
- 12 Prawns
- 1 1/2 lbs Sea bass or other firm fish, fresh
- 1 Shells from the prawns
Produce
- 1/2 bunch Basil, fresh
- 2 Bay leaf
- 2 Carrot, small
- 4 Celery, ribs
- 7 cloves Garlic
- 1/2 Green bell pepper
- 1/2 bunch Oregano, fresh
- 1/4 bunch Parsley, stems
- 1 Serrano chile, small
- 10 cups Tomatoes, canned
- 2 Yellow onion, small
Condiments
- 2 tsp Hot sauce
- 2 tsp Worcestershire sauce
Baking & Spices
- 1 tsp Fennel seed
- 1 1/2 tsp Peppercorns, black
- 1/2 tsp Peppercorns, whole black
Oils & Vinegars
- 1/4 cup Olive oil
- 2 tsp Red wine vinegar
Beer, Wine & Liquor
- 1/2 bottle Red wine, good
Other
- 3 Whole dungeness crab legs and bodies, with the crabmeat intact
