#Cioppino: A Fine Kettle of Fish


I am half Sicilian, so a large part of the family does "The Seven Fishes" on Christmas Eve. I do not have the patience to make seven dishes. I make this instead — it uses five varieties of seafood, all in one pot. Now that's a happy holiday!
Ingredients
∙ Serves 4
Meat
  • 2 Flat fillets of anchovies
Seafood
  • 1 1/2 lbs Cod
  • 16 Mussels, raw
  • 8 Sea scallops
  • 8 Shrimp, large
Produce
  • 1 Bay leaf, fresh or dried
  • 2 Celery, ribs
  • 1 handful Flat-leaf parsley
  • 6 cloves Garlic
  • 1 Onion, medium
  • 1 (32-ounce) can Style crushed tomatoes, chunky
  • 4 sprigs Thyme, fresh
Canned Goods
  • 1 (14-ounce) container Chicken stock
Baking & Spices
  • 1 tsp Red pepper flakes
  • 1 Salt and pepper
Bread & Baked Goods
  • 1 loaf Bread, fresh crusty
Beer, Wine & Liquor
  • 1 cup White wine, good quality dry
Other
  • 1/4 cup (3 turns around the pan in a slow stream) extra-virgin olive oil
