#One-Pot 45 Minute Coq au Vin with Brown Butter Sage Mashed Potatoes

It's a really good meal and it's made pretty quickly and easily - and I love it.
Ingredients
∙ Serves 6
Meat
- 4 slices Bacon, thick cut
- 1 1/2 lbs Chicken tenders or small chicken breasts, boneless
Produce
- 2 cups Button mushrooms
- 2 Carrots, medium size
- 6 cloves Garlic
- 4 Idaho potatoes, large
- 1/2 cup Parsley, fresh
- 8 Sage, leaves fresh
- 1 Sweet onion
- 1 Sweet potato, small
- 4 whole sprigs Thyme, fresh
Canned Goods
- 2 cups Chicken broth
- 2 tbsp Tomato paste
Baking & Spices
- 1 Salt
- 1 Salt and pepper
Oils & Vinegars
- 4 tbsp Olive oil
Dairy
- 8 tbsp Butter, unsalted
- 3/4 cup Heavy cream
Beer, Wine & Liquor
- 2 cups Red wine
Other
- 2 Leaves bay
