#Healthier Instant Pot Coq au Vin


For those cold fall and winter nights when you want a fancy slow braised chicken, but you want it ready in less than an hour. All made in the instant pot (or the slow cooker), using simple, wholesome ingredients you may already have on hand
Ingredients
Gluten free
Meat
  • 2 slices Bacon, thick cut
  • 1 1/2 lbs Chicken breasts, boneless
Produce
  • 2 Bay leaves
  • 4 Carrots
  • 2 cups Cremini mushrooms
  • 4 cloves Garlic
  • 1 Mashed potatoes
  • 1/2 cup Parsley, fresh
  • 4 Thyme, sprigs
  • 1 Yellow onion
Canned Goods
  • 1 cup Chicken broth, low sodium
  • 2 tbsp Tomato paste
Baking & Spices
  • 1 Kosher salt and black pepper
Beer, Wine & Liquor
  • 1 1/2 cups Red wine, dry
