#Spicy Pumpkin and Pesto Cheese Stuffed Shells


Perfect for nights when you're craving Italian, but you're also craving fall flavors. Jumbo pasta shells stuffed with a basil pesto and ricotta cheese mixture. Then baked in a spicy pumpkin vodka sauce that's creamy and so delicious!
Ingredients
Meat
  • 1/2 lb Italian chicken sausage, ground spicy
Produce
  • 1 Basil, fresh
  • 2 tsp Oregano, dried
  • 1 cup Pumpkin puree
  • 1 Red bell pepper
Condiments
  • 3/4 cup Basil pesto, homemade or store bought
Pasta & Grains
  • 1 lb Shells, jumbo
Baking & Spices
  • 1 Kosher salt and pepper
  • 1 pinch Red pepper flakes
Oils & Vinegars
  • 2 tbsp Olive oil, extra virgin
Dairy
  • 2 cups Fontina cheese
  • 8 oz Mozzarella
  • 1 cup Whole milk
  • 16 oz Whole milk ricotta cheese
Beer, Wine & Liquor
  • 1/2 cup Vodka
