Spicy Jamaican jerk spiced grilled eggplant! Ready in 30 minutes, incredibly flavorful, and the perfect plant-based side dish!
Ingredients

- 1 tbsp Coriander, ground
- 1 Eggplants, large
- 4 cloves Garlic
- 1 1/3 tbsp Ginger, fresh
- 1 stalk Green onion
- 3 stalks Green onions or scallions
- 1 Serrano or habanero pepper, medium
- 2 tbsp Thyme, fresh
Condiments
- 1/4 cup Bbq sauce, vegan
- 3 tbsp Coconut sugar or maple syrup
- 4 tbsp Lime juice
Baking & Spices
- 1/4 tsp All spice
- 1/4 tsp Cayenne pepper
- 1 pinch Cayenne pepper
- 1 tsp Cinnamon, ground
- 1/2 tsp Sea salt and black pepper
- 1 pinch Sea salt and black pepper
Oils & Vinegars
- 2 tbsp Coconut oil
- 1 tbsp Grape seed or olive oil
Nuts & Seeds
- 1/4 cup Tamari or coconut aminos
